There are three tea growing regions in India. Assam, Nilgiri and Darjeeling all fine blacks used in making this brew.Chai is simply one of these teas with a combination of spices.

For example if using:
Darjeeling leaves will give it a lighter more delicate flavor. Cardamom goes well withthe Darjeeling.
Nilgiri leaves take the spice flavors easily. This is a great one to use if you want iced Chai.
Assam leaves are great for a hot brew. It is able to bear the stronger spices. Pepper and Ginger works well with the Assam.
