There are three tea growing regions in India. Assam, Nilgiri and Darjeeling all fine blacks used in making this brew.Chai is simply one of these tea with a combination of spices.

For example if using:
Darjeeling leaves will give it a lighter more delicate flavor. Cardamom goes well withthe Darjeeling.
Nilgiri leaves take the spice flavors easily. This is a great one to use if you want iced Chai.
Assam leaves are great for a hot brew. It is able to bear the stronger spices. Pepper and Ginger works well with the Assam.By trying all three you may discover your favorite could be more than just one!
