In India, tea is simply known as Chai. 

The combination of tea and spices is a stimulating and nourishing drink. A brew that can be calming but at same time have a stimulating effect on a tired stressed out self. It may be due to the comforting spices use.

Adding milk and sugar makes this a simply delicious brew.

Types of Teas Used with Chai Spices.

There are three tea growing regions in India. Assam, Nilgiri and Darjeeling all fine blacks used in making this brew.Chai is simply one of these teas with a combination of spices.

List of spices generally used:

Cinnamon
Ginger
Cloves
Black Pepper
Cardamom
Fennel
Allspice
Star Anise

Each of the Blacks listed below give the spicy brew a different flavor profile...experiment to find your favorite.

For example if using:

Darjeeling leaves will give it a lighter more delicate flavor. Cardamom goes well withthe Darjeeling.

Nilgiri leaves take the spice flavors easily. This is a great one to use if you want iced Chai.

Assam leaves are great for a hot brew. It is able to bear the stronger spices. Pepper and Ginger works well with the Assam. 

So grab your favorite spices from the list above and pick your favorite Darjeeling, Nilgiri or Assam and start playing around to find a combination that works for you.
